Drawing inspiration from the Peruvian Andes, chefs Virgilio Martínez and Pía León embarked on a fresh endeavor in July 2023: Mil Centro, a place dedicated to research and interpretation, which has recently earned the prestigious title of the best gastronomic experience in the world at the 2023 World Culinary Awards.
According to the organization, Mil Centro is not just a restaurant that provides a timeless journey through a proposal inspired by the environment, but it also offers the best gastronomic experience in the world.

Situated in Moray, 53 kilometers to the northwest of Cusco, this establishment presents a culinary experience based on 8 moments, 8 high-altitude ecosystems. Its gastronomic proposal is centered on regionally sourced products, undergoes daily modifications, and is exclusively offered to a daily clientele of just 20 individuals.

"The Mil Mundo immersion invites you to pause, shift your rhythm and perceive the world from a different perspective. Enjoy the inspired and environmentally aligned culinary proposal, as well as engage with the daily routines of nearby rural communities, their customs and millennia-old traditions near the archaeological site of Moray," according to the official website of the restaurant.

Virgilio and Pía provide a comprehensive experience structured into six distinct moments. The initial part, known as the Moray Guide, entails an exploration of the Moray Archaeological Zone. The subsequent phase, Crop Fields, is designed to provide guests with a glimpse into the work of farmers from the Mullak's Misminay and Kacllaraccay communities.
The third stop is the Botanical Route, where a hike is taken through the hills surrounding the restaurant to discover a wide array of plant species that are not only used for sustenance but also possess medicinal properties. The fourth moment is Mater Projects, where the results of Mil Centro's work with artists, collectors, producers, and artisans are displayed.
The last two stops are Ferments and Distillates and the Gastronomic Experience. In the first, drinks prepared with ingredients that narrate their cultural roots and traditions are showcased. This selection of drinks is intended to fully immerse you in the Andean world. Finally, there is the 8-course menu tasting, promising to be an unparalleled gastronomic journey.
Regarding this new project, Virgilio comments that one of the most delightful moments is when they set up the dining table outdoors, allowing diners to witness the archaeological site and actively engage in the preparation of subterranean tubers.
