After an extensive culinary expedition in October, guided by Peruvian chef Andrés Ángeles Bachelet, Australian journalist Ben Groundwater, in partnership with The Sydney Morning Herald, declares Peru as the best country for dining worldwide. The exploration delved into the culinary corners of Lima and Cusco, beginning in the constitutional province of Callao.

He experienced the unique essence of chalaca cuisine, highlighting fusion as a fundamental element, emphasizing the influence of "chifa" and "nikkei" cuisine resulting from the integration with Chinese and Japanese gastronomy, respectively. Groundwater praised the diversity of Peruvian cuisine, from the richness of coastal seafood to the unique meats of alpaca and guinea pig in the Andean region, as well as the astonishing variety of flora and fauna in Amazonian cuisine. He emphasized the passion invested in preparing these meals, portraying them as a meeting point for the entire country.

 

 

During his itinerary, Groundwater engaged with notable Peruvian chefs who shared their perspectives on gastronomy, which holds a prominent place in global rankings. The journey concluded with a visit to Mil, the restaurant owned by chefs Virgilio Martínez and Pía León, awarded as the best gastronomic experience in the world at the World's Culinary Awards. Groundwater described the food as "brilliant, incredibly delicious, and unique; something never seen before”.
